'Idli / Dosa Ingredients for Preparing batter:- 1. Raw rice – 4 cups 2. Black gram (uzhunnu) – 1 cup 3. Fenugreek (uluva) - 1 tbsp Preparation: Soak raw rice, uzhunnu & uluva for 3 hrs and grind it. Keep it aside overnight and before making Idli/Dosa add salt to the batter. While making dosa spread some ghee on it. Sambar Powder:- Ingredients : 1. Bengal Gram dal – 2 tbsp 2. Cumin seeds (Small jeera)– ½ tsp 3. Red Chilli 4. Fenugreek (uluva) – 1 tsp 5. Coriander – 4 tbsp 6. Curry leaves Preparation : Roast all the ingredients and grind it to fine powder. Sambar:- Ingredients: 1. Dal – ¾ cup 2. Onion – 2 3. Green chilli – 3 4. Tomato – 4 5. Potato – 1 6. Radish – 3 7. Pumpkin Ingredients to Saute: 1. Onion – 1 2. Garlic 3. Curry leaves 4. Turmeric Powder – ¼ tsp 5. Grinded masala 6. Mustard seeds 7. Lady’s finger - 4 Other Ingredients: 1. Coconut oil – 2 tbsp 2. Water 3. Salt to taste 4. Asafoetida (Kayam powder) Preparation: - Cook dal - Add all the vegetables except lady’s finger and add sufficient water and salt to it and cook well. - Heat a pan with oil and sauté all the ingredients including lady’s finger and mix it to the cooked vegetables and add sufficient water and salt to it. - Add ¼ tsp of Asafoetida (kayam powder) and let it boil.
